Chicken and Rice with Mushrooms
I saw a chicken and rice recipe that inspired me to make this chicken and rice with mushrooms, and it turned out to be such a great meal for a busy day. It only took about 10 minutes to prep, and then I could pop it in the oven while I worked on my online school assignments. It has such a practical, comforting flavor, and because of the rice it was really filling. We even ended up with leftovers, which is always a win for a busy family.
Ingredients
- 2 cups white rice
- 8 ounces Bella mushrooms, washed and chopped
- 2 cans (10 oz each) beef consommé
- 1 (10 oz) can Campbell’s French onion soup
- 1 stick butter
- Parmesan cheese
- 1 teaspoon kosher salt
- 3/4 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- A sprinkle of Kinder’s Buttery Steakhouse seasoning, optional
- 2 to 3 pounds boneless skinless chicken thighs
Instructions
- Preheat your oven to 350°F.
- Pour the white rice into a baking dish. Add the chopped Bella mushrooms, 2 cans of beef consommé, and 1 can of French onion soup. Stir everything together well.
- Add the stick of butter to the dish, then sprinkle a generous layer of grated Parmesan cheese over the top.
- Season the chicken thighs on both sides with 1 teaspoon kosher salt, 3/4 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon paprika, and a sprinkle of Kinder’s Buttery Steakhouse seasoning if you want to use it. Sprinkle a little Parmesan cheese over the chicken as well.
- Place the seasoned chicken on top of the rice mixture. Cover the dish with foil and bake for 55 minutes.
- Remove the foil and continue baking for another 20 to 30 minutes, or until the chicken is fully cooked. The exact baking time will depend on how much chicken you use.
Helpful Note
You can easily halve this recipe if you need a smaller portion. If you do, the cooking time will be a little less, so just keep an eye on it as it bakes.
